L-2-Hydroxyglutaric acid - Introduction
(2S)-2-hydroxybenzenedioic acid(S-2-Hydroxybutanedioic acid), also known as L-Lactic acid, is an organic acid. It has a colorless to yellow liquid state and is soluble in water at room temperature.
(2S)-2-hydroxypentanedioic acid is a naturally occurring organic acid, which is widely present in organisms, especially in muscle tissue and fermented foods such as yogurt. It is a product of lactic acid fermentation and can also be obtained by chemical synthesis.
(2S)-2-hydroxypentanedioic acid has many applications. First, it is widely used as an acidulant, flavoring and preservative in the food and beverage industry. Secondly, it is used in areas such as pharmaceuticals, cosmetics and personal care products. In addition,(2S)-2-hydroxypentanedioic acid is also used to prepare biodegradable plastics such as polylactic acid.
There are two methods for preparing (2S)-2-hydroxypentanedioic acid: natural fermentation and chemical synthesis. Natural fermentation method is obtained by fermentation of carbon source (such as glucose) by microorganisms (such as Lactobacillus). Chemical synthesis mainly converts other compounds into (2S)-2-hydroxypentanedioic acid through synthetic reactions.
When using (2S)-2-hydroxypentanedioic acid, you need to pay attention to some safety information. It has a certain degree of irritation, contact with the skin and eyes may cause irritation, should avoid direct contact. During use and storage, attention should be paid to protective measures to avoid inhaling its vapor or dust. At the same time, correct operating methods should be followed and appropriate personal protective equipment should be used.
